  • 1 tablespoon butter
  • 1 medium onion, diced
  • 1 cup carrot, diced
  • 1 tablespoon curry powder
  • 1 teaspoon oil
  • 1 teaspoon mustard seeds
  • 1 lb large shrimp
  • 12 cup coconut milk
  • 1 cup peas (thawed if frozen) or 1 cup lima beans (thawed if frozen)
  • 12 teaspoon salt

Directions

    Heat butter in skillet.

    Reduce heat, cook onion and carrot.

    Add curry powder and cook 1 minute, stirring.

    Then remove to a bowl.

    Add oil to skillet, then heat mustard seeds, cook 30 seconds, stirring.

    Add shrimp, cook until opaque, about 4 minutes, stirring frequently.

    Return vegetables to skillet and add remaining ingredients to heat through.
