Shrimp Etouffee

  • 4 lb. shrimp
  • 1 bunch green onions, minced
  • 3 medium yellow onions, minced
  • 2 cloves garlic, minced
  • 3/4 c. minced parsley
  • 1/2 c. margarine
  • 1 1/2 Tbsp. tomato paste
  • 3 Tbsp. salt
  • Tabasco to taste
  • cornstarch
  • cayenne pepper (optional)

Directions

    Peel and devein shrimp.

    Saute minced onions, garlic and parsley in margarine until soft; do not brown.

    Add tomato paste. Stir well and cook for a few minutes.

    Add shrimp and seasonings. Cook about 20 minutes.

    Thicken slightly with cornstarch.

    Serves 8.
