Shrimp Etouffee

Ingredients

  • 1 lb. shrimp, cleaned and deveined
  • 1 small can stewed tomatoes
  • 4 cloves minced garlic
  • 1/2 c. butter
  • 1/2 c. finely chopped parsley
  • 1 Tbsp. flour
  • salt and pepper to taste

Directions

    Blend tomatoes, including liquid, until fine.

    In skillet, make roux of flour and butter (over low heat).

    Add garlic and continue browning until tender.

    Add tomatoes, shrimp, salt and pepper.

    Simmer 15 to 20 minutes.

    Add chopped parsley before removing from heat.

    Serve over rice.

    Serves 2 to 4.
