- 1 lb. shrimp, cleaned and deveined
- 1 small can stewed tomatoes
- 4 cloves minced garlic
- 1/2 c. butter
- 1/2 c. finely chopped parsley
- 1 Tbsp. flour
- salt and pepper to taste
Directions

1Blend tomatoes, including liquid, until fine.

2In skillet, make roux of flour and butter (over low heat).

3Add garlic and continue browning until tender.

4Add tomatoes, shrimp, salt and pepper.

5Simmer 15 to 20 minutes.

6Add chopped parsley before removing from heat.

7Serve over rice.

8Serves 2 to 4.
