Shrimp Fried Rice

Ingredients
- 1 pt. whole grain rice
- 1 lb. shrimp, cooked and peeled
- 1/2 c. Wesson oil
- 1/2 tsp. soy sauce
- 2 eggs, beaten
- 2 tsp. salt
- 1 large onion, chopped
- 1 c. bean sprouts
Directions

1Bring 1 1/2 quarts of water to boil.

2Add rice and salt.

3Cook until tender, stirring occasionally.

4When rice is done, drain. Cool.

5Cut shrimp lengthwise and set aside.

6Heat oil in heavy skillet.

7Stir in shrimp and onion.

8Beat eggs and add to skillet. Stir and cook for 2 1/2 minutes.

9Stir in rice and continue to cook for 3 minutes.

10Sprinkle soy sauce and mix well.

11Salt and pepper to taste.

12Add bean sprouts and cook 3 more minutes. Serves 6 to 8 people.
