Shrimp Fried Rice

Ingredients
- 2 Tbsp. peanut oil
- 2 c. chopped onion
- 1/2 (3 oz.) can chopped mushrooms, drained
- 1 can water chestnuts, slivered
- 2 c. cooked rice (use 1 c. rice, and cook according to pkg. directions)
- 1/2 tsp. sugar
- 2 eggs, slightly beaten
- 1/4 c. soy sauce
- 2 c. cooked shrimp, chopped
- 1 to 2 Tbsp. green onion for garnish
Directions

1Heat frying pan or wok, add oil and cook onions until golden brown.

2Add mushrooms and water chestnuts and cook one minute. Stir in cold rice, mix well and cook an additional 2 minutes.

3Add sugar, eggs, soy sauce and shrimp.

4Cook until heated through and golden brown in color.

5Garnish with chopped green onions.
