Ingredients
- 6 Tbsp. vegetable oil, divided
- 6 eggs, slightly beaten
- 1 c. chopped green onions
- 2 cloves garlic, crushed
- 1 (16 oz.) pkg. salad shrimp, thawed
- 1 (10 oz.) pkg. frozen green peas, thawed
- 8 c. cooked rice
- 1/2 tsp. salt
- 1/4 tsp. ginger
- 5 Tbsp. soy sauce or to taste
Directions

1In wok or large skillet heat 3 tablespoons oil.

2Add eggs; cook and stir until set.

3Set aside.

4Add remaining oil to skillet.

5Add green onions, garlic, shrimp and peas.

6Stir-fry 2 minutes.

7Stir in eggs and remaining ingredients.

8Heat through; serve hot.
