- 1 Tbsp. vegetable oil
- 1 c. sliced fresh mushrooms
- 1/2 c. sliced green onions
- 1 tsp. minced fresh ginger
- 1 egg, beaten
- 2 c. cooked rice, chilled
- 1 1/2 c. cooked shrimp, cut in small pieces
- 1 Tbsp. soy sauce
Directions

1Heat oil in large skillet or wok over medium-high heat.

2Add mushrooms, onions and ginger.

3Stir-fry for 1 minute.

4Push vegetables aside; pour egg into skillet and scramble.

5Stir in rice, gently separating grains.

6Add shrimp and soy sauce; stir until thoroughly heated.

7Makes 4 servings.
