Shrimp Fried Rice

- 6 eggs, beaten
- 1 lb. shrimp, peeled and deveined
- 1/2 c. onion, chopped
- 1/4 c. bell peppers
- 1/4 c. green onions
- 1/2 c. mushrooms
- 2 c. cooked rice
- 1 block margarine or butter
- 1 Tbsp. Tony's seasoning
- 1 tsp. salt
Directions

1Saute onions, bell peppers and mushrooms in butter until they are clear.

2Season shrimp, then add to vegetables.

3Cook on medium heat until shrimp are cooked.

4Pour beaten eggs into shrimp and vegetable mixture.

5Add rice; stir until rice is coated with egg mixture.

6Cover and cook on low heat until eggs are cooked.

7(Cook in a 10-inch black iron skillet with cover.)

8Makes four 1-cup servings.
