- 1 Tbsp. butter
- 3 Tbsp. olive oil
- 1 1/2 lb. medium shrimp, shelled and deveined
- 1 medium onion, chopped
- 1 garlic clove, minced
- 1/2 c. dry white wine
- 1/4 c. chicken broth
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. lemon juice
- 1/4 c. chopped parsley
Directions

1In a wok, melt butter in 1 tablespoon olive oil over high heat until hot, swirling to coat sides of pan.

2Add shrimp and stir-fry until shrimp are pink and curled, 2 to 3 minutes.

3Remove to plate. In same wok, heat remaining 2 tablespoons oil over medium-high heat.

4Add onion and garlic.

5Stir-fry until soft, 3 to 5 minutes. Add wine, chicken broth, salt, pepper and lemon juice.

6Boil over high heat until reduced by one-third, about 3 minutes.

7Return shrimp to wok.

8Cook, tossing, for 30 seconds to heat through.

9Add parsley and serve with rice and lightly sauteed zucchini.
