Shrimp Monterey

Ingredients

  • 2 clove minced garlic
  • 2 tbsp butter
  • 2 lb raw medium shrimp
  • 1/2 cup chicken broth
  • 2 cup shredded Monterey cheese
  • 2 tbsp minced fresh parsley

Directions

    In skillet over medium heat, saute garlic in butter for 1 minute.

    Add shrimp and cook for 4-5 minutes or until pink.

    Put shrimp in 11 x 7 greased baking dish and set aside.

    Add broth to skillet and bring to a boil.

    Cook and stir for 5 minutes or until sauce is reduced.

    Pour broth over shrimp and top with cheese and parsley.

    Bake uncovered at 350 for 10 minutes or until cheese is melted.

    Serve over pasta or rice.
