- 1 lb. pasta
- 1 stick butter
- 2 1/2 Tbsp. fresh ginger
- 1 1/2 Tbsp. yellow mustard seeds
- 1/3 c. dry-roasted cashews (unsalted)
- 1 1/2 Tbsp. shredded coconut
- 1/3 c. chopped cilantro
- shrimp
- 1/4 c. olive oil
- 1 1/2 Tbsp. fresh ginger
- 1/3 c. scallions, sliced
- 1 1/2 Tbsp. lime juice
- salt and pepper
- lime wedges and cilantro
Directions

1Grate ginger or cut into fine strips.

2Heat a large frying pan and add butter, 2 1/2 tablespoons ginger, the mustard seeds and cashews.

3Saut for 2 minutes.

4Add precooked pasta (use a kind with ridges), coconut and cilantro.

5Saut over medium heat until hot.

6Set aside; keep warm.

7Heat a large frying pan and add oil and 1 1/2 tablespoons ginger.

8Saut 30 seconds.

9Add shrimp (use large precooked ones), scallions and lime juice.

10Saut until hot.

11Add salt and pepper to taste.

12Serve over hot pasta and garnish with lime wedges and cilantro.
