- 1 1/2 lb. large shrimp, shelled and deveined
- 1 lb. sliced mushrooms
- 2 garlic cloves, minced
- 3 medium tomatoes, diced
- 2 Tbsp. lemon juice
- salt and pepper
- 2 Tbsp. chopped parsley
- 3 c. hot, cooked rice
Directions

1About 45 minutes before serving in a 12-inch skillet over medium heat in 2 tablespoons of oil, cook shrimp, stirring often about 3 minutes until shrimp turn pink; set aside.

2In same skillet, add 1 tablespoon of oil.

3Add mushrooms; cook until tender, about 3 minutes.

4Add tomatoes, lemon juice, salt and pepper.

5Cook 3 minutes more.

6Return shrimp to skillet.

7Heat through.

8Sprinkle with parsley.

9Serve with rice.
