Shrimp-Rice-Bean Salad

- 1/2 c. converted white rice
- 8 oz. shrimp, shelled and deveined
- 1 (15 oz.) can black beans, drained and rinsed
- 1/4 c. medium-hot salsa
- 2 Tbsp. reduced fat sour cream
Directions

1Cook rice, following package directions.

2Drain and rinse. Place in medium-sized bowl.

3Bring 4 cups water to boil in medium saucepan.

4Add shrimp.

5Simmer, uncovered, for 3 minutes or until shrimp is cooked through.

6Drain.

7Add along with beans to rice. Cool to room temperature.
