Ingredients
- 1 lb. deveined, cooked shrimp
- 1 can water chestnuts, drained and sliced
- 1/2 c. sliced ripe olives
- 1 1/4 c. mayonnaise
- 1 tsp. soy sauce
- 1/4 tsp. curry powder
- 2 c. cooked, chilled rice
- 1 c. chopped celery
- 1/4 c. chopped green onions
- 1 Tbsp. lemon juice
- 1/4 tsp. ground ginger
Directions

1Drain shrimp and chill.

2Combine rice, water chestnuts, celery, olives and onions in a large bowl.

3Combine mayonnaise, lemon juice, soy sauce, ginger and curry powder.

4Mix well.

5Pour over rice mixture and mix well.

6Chill at least 1 hour.

7Fold in shrimp.

8Serve on lettuce and garnish with tomato wedges.
