  • 2 beaten eggs
  • 3/4 c. soft bread crumbs
  • 1/2 c. tomato juice
  • 2 Tbsp. snipped parsley
  • 1/4 tsp. salt
  • 1/2 tsp. oregano
  • 1/4 tsp. pepper
  • 1 small clove garlic, minced
  • 2 lb. ground beef
  • 8 slices boiled ham
  • 6 oz. shredded Mozzarella cheese
  • 3 slices Mozzarella cheese, halved

    Combine eggs, crumbs, tomato juice and seasonings.

    Stir in beef.

    Mix well.

    Pat meat into a 12 x 10-inch rectangle.

    Arrange ham slices atop of meat.

    Sprinkle shredded cheese from short end. Roll meat; seal edges.

    Put seam down in 13 x 9 x 2-inch baking pan.

    Bake at 350° for 1 hour and 15 minutes, then arrange cheese wedges on top of roll.
