Simple Fish Casserole

Ingredients

  • 1 Tbsp. butter or margarine
  • 1 (10 oz.) pkg. frozen leaf spinach, thawed
  • 1 lb. fish fillets, fresh or frozen
  • salt and pepper
  • 2 tsp. lemon juice
  • 1 small onion, thinly sliced
  • 1 (10 3/4 oz.) can condensed Cheddar cheese soup
  • 1 large tomato, sliced
  • oregano to taste

Directions

    Spread butter on bottom of shallow 2-quart baking dish.

    Add spinach and cover with fish fillets.

    Season lightly with salt, pepper and lemon juice.

    Add onion and spread soup on top. Arrange tomato slices on top of soup and sprinkle with oregano. Bake in preheated 350° oven for 35 minutes.
