Simple Fruit Cake

  • 2 sticks butter and margarine
  • 1 c. sugar
  • 5 eggs
  • 1 lb. candied cherries
  • 1 lb. candied pineapple
  • 4 c. chopped pecans
  • 1 box raisins
  • 1 (1 oz.) bottle vanilla flavoring
  • 1 (1 oz.) bottle lemon flavoring
  • 1 3/4 c. plain flour
  • 1/2 tsp. baking powder

Directions

    Cream together butter, sugar and eggs.

    Mix flour and baking powder, use 1/2 flour to dredge fruit.

    Mix rest of flour in egg, butter and sugar.

    Mix fruit and nuts to frost.

    Bake in tube pan. Only takes 30 minutes at 300°, then turn down to 250° for 1 1/2 hours.

    Cool in pan, upside down.

    Makes 2 small fruit cakes.
