  • 2 medium onions
  • 3 medium carrots
  • 3 celery ribs
  • 1 cup parsley, w/stems
  • 3 cloves garlic, crushed
  • 12 teaspoon thyme
  • 2 bay leaves
  • 2 quarts water
  • to taste salt and pepper

Directions

    Place all ingredients in a large soup pot.

    Bring to a boil, reduce the heat and simmer uncovered for 45 minutes.

    Strain and use immediately or refrigerate (or freeze) until needed.
