- 12 ounces boneless skinless salmon
- 12 cup green pepper, diced
- 12 cup green onion, chopped
- 2 eggs
- 12 cup Italian seasoned breadcrumbs
- 1 tablespoon garlic, minced
- 12 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- 14 teaspoon dried dill
- pepper
Directions

1In a large bowl, combine salmon, eggs, lemon juice, mustard, garlic, dill and pepper.

2Stir in green peppers, green onions and bread crumbs.

3Form into 4 patties.

4Spray skillet with nonstick cooking spray.

5Cook salmon cakes on medium low heat for 5 minutes on each side, or until golden brown.
