  • 12 ounces boneless skinless salmon
  • 12 cup green pepper, diced
  • 12 cup green onion, chopped
  • 2 eggs
  • 12 cup Italian seasoned breadcrumbs
  • 1 tablespoon garlic, minced
  • 12 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 14 teaspoon dried dill
  • pepper

Directions

    In a large bowl, combine salmon, eggs, lemon juice, mustard, garlic, dill and pepper.

    Stir in green peppers, green onions and bread crumbs.

    Form into 4 patties.

    Spray skillet with nonstick cooking spray.

    Cook salmon cakes on medium low heat for 5 minutes on each side, or until golden brown.
