Ingredients
- 1 tablespoon grated fresh ginger
- 2 tablespoons soy sauce
- 2 tablespoons chicken broth or 2 tablespoons vegetable broth
- 2 tablespoons balsamic vinegar
- 1 tablespoon toasted sesame oil
- 2 tablespoons sugar
- 14 teaspoon sriracha sauce (optional)
- 9 ounces dried soba noodles
- 6 scallions
- 2 tablespoons toasted sesame seeds (optional)
Directions

1To make the dressing, combine the ginger, soy sauce, broth, vinegar, sugar, oil and chili sauce.

2Allow to rest, unrefrigerated, for an hour to let the flavors mature.

3Cook the noodles in boiling unsalted water for 6 to 7 minutes.

4Then drain in a colander and rinse twice.

5Slice the green and white parts of the scallions very thinly.

6Combine dressing, noodles, and scallions in a large bowl and toss.

7Garnish with toasted sesame seeds.

8This is good at any temperature.
