  • 3/4 lb. beef, top round or chuck, in thin strips
  • 2 Tbsp. shortening
  • 2 c. celery, sliced
  • 2 medium onions, sliced
  • 1 green pepper, sliced
  • 2 tomatoes, quartered
  • 1/4 tsp. salt
  • 2 tsp. sugar
  • 3 Tbsp. soy sauce
  • 1/2 lb. spinach

    Brown meat well in shortening.

    Add celery, onions, green pepper and tomatoes.

    Cover and simmer about 20 minutes or until vegetables are tender, but firm.

    Add salt, sugar and soy sauce. Add spinach and cook 5 minutes longer.

    Serve over rice.
