- 1 Tbsp. oil
- 1/2 c. chopped onions
- 1/2 c. chopped or thinly sliced celery
- 3 c. cooked rice (white or brown)
- 1/2 c. cooked meat or poultry, cut into bits
- 1/2 c. cooked vegetables (leftovers work great)
- lite soy sauce to taste (optional)
Directions

1Heat the oil in a skillet.

2Saute the onions and celery for a few minutes.

3Add rice; stir to separate kernels.

4Add the meat and vegetables.

5Cook, stirring just enough to heat through. Sprinkle with soy sauce, if desired.

6Yields 3 to 4 servings.
