Single Serving Mini Meat Loafs

Ingredients

  • 100 g lean ground beef
  • 2 tablespoons rolled oats
  • 1/8 cup onion, finely sliced
  • 1/8 cup carrot, finely grated
  • 1/2 egg, slightly beaten
  • 1/4 teaspoon mixed herbs
  • 1/2 teaspoon curry powder
  • 1 teaspoon hoisin sauce
  • 1/2 tablespoon tomato paste

Directions

    Mix all the ingredients together in a bowl.

    If time permits chill in the fridge for an hour or so.

    Shape mixture into a loaf.

    Place in an oven proof container and cover.

    Cook for 25min at 180-200 deg C.

    Removed from oven and top with tomato sauce (can mix 1 tbsp of brown sugar if you have a sweet tooth).

    Return to oven for 15-20 more minutes or until cooked.

    Let the loaf sit for a couple of minutes before cutting or serving.
