Ingredients

  • 3 c. All-Bran cereal
  • 1 c. boiling water
  • 1 stick margarine, melted
  • 1 1/2 c. sugar
  • 2 eggs, beaten
  • 2 c. buttermilk
  • 2 1/2 c. flour
  • 1/2 to 1 tsp. salt
  • 2 1/2 tsp. baking soda
  • 1/3 tsp. cinnamon
  • 1 c. raisins

    Place 1 cup cereal in a large bowl.

    Pour boiling water over bran.

    Stir in margarine and set aside.

    Combine remaining bran with sugar, eggs and buttermilk.

    Sift flour with soda, salt and cinnamon.

    Combine all ingredients, blending well.

    Cover and refrigerate at least 4 hours or overnight.

    When ready to bake, grease muffin tins and fill 2/3 full with batter.

    Bake 15 to 20 minutes at 400°.
