Skillet Chicken Risotto

Ingredients
- 1 fryer, cut up
- 2 Tbsp. cooking oil
- 3/4 c. long grain rice
- 1/2 c. chopped onion
- 2 tsp. salt
- 1 tsp. poultry seasoning
- 8 oz. fresh mushrooms, sliced
- 4 medium carrots, peeled and cut into 1/2-inch slices
- 2 c. water
- paprika
Directions

1In 10-inch skillet, brown chicken in hot oil for about 15 minutes.

2Remove chicken and drain all but 2 tablespoons fat from skillet.

3Add rice, onion, salt and poultry seasoning to skillet. Cook and stir until rice is lightly browned.

4Add mushrooms, carrots and water.

5Place chicken atop rice mixture.

6Season chicken with additional salt and pepper.
