- 1 c. coarsely chopped onion
- 1 clove garlic, minced
- 3/4 lb. zucchini, cubed (3 c.)
- 2 medium tomatoes, chopped
- 1 green pepper, cut in 1-inch strips
- 1 tsp. basil leaves
- 1/4 tsp. black pepper
- 1 lb. fish fillets (flounder, haddock, sole or turbot)
- 3 Tbsp. lemon juice
Directions

1In a large skillet, heat corn oil over medium-high heat.

3Stir frequently; cook 1 to 2 minutes.
