  • 2 Tbsp. corn oil
  • 1 c. coarsely chopped onion
  • 1 clove garlic, minced
  • 3/4 lb. zucchini, cubed (3 c.)
  • 2 medium tomatoes, chopped
  • 1 green pepper, cut in 1-inch strips
  • 1 tsp. basil leaves
  • 1/4 tsp. black pepper
  • 1 lb. fish fillets (flounder, haddock, sole or turbot)
  • 3 Tbsp. lemon juice

    In a large skillet, heat corn oil over medium-high heat.

    Add onion and garlic.

    Stir frequently; cook 1 to 2 minutes.

    Add zucchini, tomatoes, green pepper, basil and black pepper, stirring occasionally.
