  • 1 lb ground beef
  • 1 (1 1/4 ounce) package taco seasoning (to taste)
  • 2 12 cups water
  • 2 12 cups cooked brown rice
  • 2 cups shredded low-fat cheddar cheese
  • 2 cups chopped lettuce
  • 1 large tomatoes, chopped
  • nonfat sour cream
  • salsa (optional)

Directions

    Spray a large nonstick skillet with olive oil spray.

    Add meat and brown.

    Add seasonings and water.

    Bring to a boil then simmer for approx 20 minutes.

    Add rice and simmer until mixture thickens.

    Sprinkle with cheese.

    Cover pan until cheese melts.

    Smooth a layer of sour cream.

    Top with the tomato and lettuce.
