- 1 lb ground beef
- 1 (1 1/4 ounce) package taco seasoning (to taste)
- 2 12 cups water
- 2 12 cups cooked brown rice
- 2 cups shredded low-fat cheddar cheese
- 2 cups chopped lettuce
- 1 large tomatoes, chopped
- nonfat sour cream
- salsa (optional)
Directions

1Spray a large nonstick skillet with olive oil spray.

2Add meat and brown.

3Add seasonings and water.

4Bring to a boil then simmer for approx 20 minutes.

5Add rice and simmer until mixture thickens.

6Sprinkle with cheese.
