  • 4 large potatoes, baked
  • 1/2 c. shredded Cheddar cheese
  • 4 strips bacon, cooked and crumbled
  • 1 green onion, chopped if desired
  • 1/2 c. buttermilk or Blue cheese dressing

Directions

    Cut potatoes in half lengthwise.

    Scoop out most of potato. Sprinkle cheese, bacon and green onion over skins.

    Heat in oven at 350° for 4 to 5 minutes, until cheese is bubbly.

    Serve with dressing.
