  • 1 tablespoon vinegar, greek wine vinegar preferred
  • 5 tablespoons olive oil
  • salt, to taste

    peel potatoes.

    boil potatoes until soft, then strain.

    chop garilc.

    with flat side of a knife, work garlic into salt until a paste forms.

    place potatoes and garlic paste in a food processor.

    pulse until mixture becomes a pulp.

    add vinegar.

    add olive oil slowly until the mixture becomes unified.
