- 6 yukon gold potatoes
- 3 tablespoons butter or 3 tablespoons margarine
- 2 leeks, white and light green parts only, thinly sliced
- 3/4 teaspoon salt
- 3/4 teaspoon pepper
- 1 pinch dried thyme
- 1 1/3 cups buttermilk
Directions

1Scrub potatoes.

2Cut into 2 inch cubes.

3In large saucepan of boiling salted water,cover and cook potatoes until tender,about 15 minutes.

4Drain and return to pot.

5Meanwhile,in a small skillet,melt 1 tbsp butter over medium heat;fry leeks.

6Add a pinch of salt,pepper and thyme to leeks.

7Fry until tender,about 5 minutes.

8Add buttermilk,remaining butter,salt & pepper to potatoes;smash with potato masher until smooth with a few large pieces remaining.

9Stir in leeks mixture.
