- 1 large roasting chicken
- 1 gal. water
- 1/2 c. canning salt
- 1 c. tender quick
- 5 Tbsp. liquid smoke
Directions

1Put chicken in larger container (like a 5 gallon plastic pail).

2Pour brine (water, canning salt, tender quick and liquid smoke) over it and leave in brine for 24 hours.

3Turn chicken end for end a few times during brining time.

4Rinse off.

5Dry off. Put breast side down on rack.

6Roast for 1 hour at 350°, then turn oven down to 250° until done.
