- 1 lb. gar, cut lengthwise into 1-inch strips
- 1 can tomato sauce (small)
- 1 can Ro-Tel tomatoes
- 1/2 stick butter
- 1 onion, chopped
- 1/2 bell pepper, chopped
Directions

1Season gar.

2Smoke 4 hours over ash or hickory.

3Remove and cut into 1-inch pieces.

4Melt butter and brown gar for 1 minute. Add the rest of ingredients.

5Cover and simmer for 15 minutes.

6To serve, pour desired amount of beans over rice.

7Add a few pieces of gar and sauce.

8Enjoy.
