Ingredients

  • 1/3 c. sugar
  • 1/4 c. non-iodized salt
  • 2 c. soy sauce
  • 1 c. water
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. pepper
  • 1/2 tsp. Tabasco Sauce
  • 1 c. dry white wine (Chardonnay)
  • Salmon chunks

Directions

    Mix together above ingredients for brine (except salmon). Brine salmon chunks for 8 or more hours in the refrigerator. Rinse chunks after brining and pat dry. Air dry 1 to 2 hours to glaze.
