Smoked Salmon Pie

  • 2 1/4 lbs potatoes, peeled and coarsely chopped
  • 3 tbsp butter, softened
  • 1/4 cup sour cream
  • 6 oz smoked salmon, coarsely chopped
  • 2 None eggs, separated
  • 2 None green onions, finely chopped

Directions

    Preheat the oven to 400°F. Oil a deep 9-inch round baking dish.

    Boil, steam or microwave the potatoes until tender; drain. Mash the potatoes in a large bowl with the butter and sour cream. Stir in the salmon, one egg yolk, the egg whites and onion.

    Spoon the mixture into the prepared dish. Smooth the top with a spatula and brush with the remaining egg yolk.

    Bake for about 25 mins or until heated through and browned lightly. Serve.
