- butter
- salt and pepper to taste
- paprika
Directions

1Arrange fillets on smoker grill.

2To each, apply pat of butter or margarine.

3Add salt, pepper and paprika (for color).

4To coals, add hickory or mesquite chips according to smoker directions.

5Cook slowly for 15 to 18 minutes or until slightly golden in color.

6Serve with hush puppies, salad and corn.
