- 1 (10 to 12 lb.) turkey
- water
- 1/4 c. salt
- 1/2 Tbsp. cayenne pepper
- 12 whole cloves
- 2 Tbsp. liquid smoke
Directions

1Place turkey in 5 gallon bucket.

2Add spices and enough water to cover turkey completely.

3Marinate for 5 days (keep cool; add ice cubes if necessary).

4Wrap in foil with small hole at each end.

5Smoke over very low fire (keep temperature under 200°) for 16 hours.
