Smooth & Satiny Celery Soup

Ingredients
- 1 tablespoon crisco canola oil or 1 tablespoon vegetable oil
- 1 onion, chopped
- 5 stalks celery, chopped
- 1 celery root, chopped
- 4 cups chicken stock, vegetable stock or 4 cups water
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 cup Carnation Evaporated Milk (regular, 2% or fat free)
Directions

1Heat oil in a large saucepan or stock pot on medium heat.

2Add onion, celery and celery root. Cook for 5 minutes, stirring occasionally. Add stock, salt and pepper. Bring to a boil. Reduce heat, cover and simmer for 40 minutes.

3Puree soup. Add evaporated milk. Taste and adjust seasonings if necessary.

4TIPS: Freeze leftover soup to have on hand.
