- 2 3/4 c. sifted all-purpose flour
- 2 tsp. cream of tartar
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 c. (2 sticks) unsalted butter
- 1 1/2 c. sugar plus 1/4 c. sugar mixed with 1 Tbsp. cinnamon
- 2 large eggs
Directions

1Combine the flour, cream of tartar, baking soda and salt and sift again.

2Set aside.

3Cream the butter and sugar until fluffy, about 3 minutes.

4Add the eggs, 1 at a time, beating well after each addition.

5Add the flour mixture in 4 parts and beat thoroughly, after adding each part.

6Wrap dough in plastic wrap and refrigerate for at least 1 hour.

7Preheat oven to 400°.

8Roll dough into balls about the size of a walnut, then roll each in the sugar-cinnamon mixture.

9Place about 2 inches apart on an ungreased cookie sheet.

10Bake for about 8 to 10 minutes, or until just lightly browned, but still soft.

11Makes about 3 dozen.
