Ingredients

  • 1 lb. ground beef or ground turkey
  • 2 large carrots
  • 2 large ribs celery
  • 1 enormous onion or 2 smaller ones, peeled
  • 2 (1 lb.) cans tomatoes, chopped or 1 large can tomato puree
  • 1 c. barley
  • 2 beef bouillon cubes
  • freshly ground pepper (lots)
  • 2 Tbsp. dried parsley
  • 6 c. water

Directions

    Brown ground beef or ground turkey in a 5-quart Dutch oven or heavy pot.

    Skim off all fat.

    Slice and add carrots, celery and onion.

    Add tomatoes, barley, bouillon cubes, freshly ground pepper, parsley and 6 cups of water.

    Simmer 1 hour or until barley is fully cooked.

    Serve with hot bread or rolls, a glass of milk and fresh fruit.
