- 8 to 10 potatoes, peeled and quartered
- 1 (8 oz.) pkg. cream cheese, softened
- 1 c. dairy sour cream
- 1/2 c. minced scallions (including some greens)
- 1/2 c. minced celery
- 1/4 c. minced green pepper
- 1 Tbsp. parsley
- 1/4 c. butter, melted
- 1/4 tsp. garlic powder
- 1 tsp. salt
- pepper to taste
- 1/2 tsp. paprika
- 2 Tbsp. butter
Directions

1Cook potatoes until tender.

2Drain and return pan to low heat, shaking to dry potatoes in large bowl.

3Cream together the cheese and sour cream.

4Add hot potatoes, one at a time.

5Cream mixture and continue beating on high.

6On low speed, add scallions, celery, green pepper, parsley, 1/4 cup butter, garlic powder, salt and pepper.

7Spoon into a 3-quart baking dish.

8Sprinkle with paprika and dot with 2 tablespoons butter.

9Bake in a preheated 375° oven for 25 minutes or until top is golden.
