Ingredients

  • 400 grams Bread Flour
  • 100 grams All Purpose Flour
  • 80 grams Sugar
  • 7 grams Instant Yeast
  • 2 grams Bread Improver (opt)
  • 3 egg Yolks
  • 270 grams Cold Fresh Milk (250 cc)
  • 50 grams Butter
  • 3 grams Salt
  • 100 grams Evaporated Milk (80 cc) for brushing
  • 50 grams Succade for sprinkling

Directions

    Mix all of the dry ingredients in a bowl.

    Place all of the ingredients (dry + egg yolks + milk) into mixer bowl.

    Mix until well blended.

    Add butter and salt.

    Continue mix until dough become smooth and elastic.

    (no dough on the sides of the bowl)

    Place dough onto floured surface.

    Cover and let rise until double in size.

    (1 hour)

    Divide dough into 60 grams each pieces.

    Rounded each pieces and put on floured tray.

    Let stand for 10 minutes.

    Gently deflate risen dough then shape it to your desire then let rise again for 30 minutes.

    Preheat oven 200AC for 10 minutes while brushing each dough with evaporated milk.

    Then bake it for 15 minutes until lightly brown.
