- 4 large Russet potatoes, boiled and thinly sliced
- 1 small onion, diced
- 8 oz. shredded Cheddar
- 1 lb. ground beef, cooked and drained
- 1 small can kernel corn, drained
- 1 small can peas, drained
- 16 oz. can diced tomatoes (in juice)
Directions

1In a casserole dish, layer all ingredients, beginning with thinly sliced potatoes.

2Repeat to top of dish. Cover with foil. Bake at 325° for 30 minutes.

3Serve with a green salad and dinner rolls.
