Ingredients

  • 4 large Russet potatoes, boiled and thinly sliced
  • 1 small onion, diced
  • 8 oz. shredded Cheddar
  • 1 lb. ground beef, cooked and drained
  • 1 small can kernel corn, drained
  • 1 small can peas, drained
  • 16 oz. can diced tomatoes (in juice)

Directions

    In a casserole dish, layer all ingredients, beginning with thinly sliced potatoes.

    Repeat to top of dish. Cover with foil. Bake at 325° for 30 minutes.

    Serve with a green salad and dinner rolls.

    A wonderful hot and hearty dish.
