Ingredients
- 4 c. sifted flour
- 1 1/2 tsp. salt
- 1 Tbsp. granulated sugar
- 1 tsp. baking powder
- 1 Tbsp. shortening
- 1 pkg. dry yeast
- 1/4 c. warm water
- 1 1/2 c. scalded milk
Directions

1Combine dry ingredients and cut in shortening.

2Dissolve yeast in lukewarm water and add to scalded milk that has been cooled.

3Make a well in center of dry ingredients.

4Add liquid to dry ingredients and work into dough.

5Knead dough 15 to 20 times and set aside to rest for 10 minutes.

6Roll dough to 1/4 inch thickness or slightly thinner.

7Cut into squares or triangles and fry in deep fryer at 420°.

8Fry only 2 at a time, so the oil stays hot.

9If the oil is hot, the sopaipillas will puff up and become hollow shortly after they have been added to the oil.

10Drain on paper towels and serve hot.
