Souffled Broccoli

Ingredients

  • 2 bunches broccoli
  • 2 Tbsp. butter
  • 1 c. sliced onions
  • 2 tsp. lemon juice
  • 1/2 tsp. salt
  • 1 large egg, slightly beaten
  • 1 c. sharp Cheddar cheese

Directions

    Trim and separate broccoli.

    Cook in small amount of boiling, salted water for 10 minutes.

    Melt butter and cook onions until soft.
  4. 4
    Cut broccoli into chunks and puree with onions.
  5. 5
    Put in bowl and blend in lemon juice, salt and 3/4 of cheese.

    Fold in egg.

    Spoon into buttered dish.

    Sprinkle remaining cheese on top. Bake at 350° for 20 minutes.
