- 3/4 c. fresh sour cherries
- 2 c. flour
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 3 Tbsp. sugar
- 1 egg, beaten
- 1 c. milk
- 3 Tbsp. oil
- 1/4 c. sugar
- 1/8 tsp. cinnamon
Directions

1Pit cherries and drain.

2Sift flour, baking powder, salt and sugar (3 tablespoons).

3In a bowl, combine the egg, milk and oil. Pour into dry ingredients all at once.

4Stir until dry ingredients are moist, but still lumpy, about 17 to 25 strokes.

5To the drained cherries, add 1/4 cup sugar and the cinnamon.

6Gently fold into batter.

7Spoon batter into lightly buttered muffin pans 2/3 full.

8Bake at 400° for 20 to 25 minutes.

9Makes 18 muffins.
