Sour Cherry Muffins

  • 3/4 c. fresh sour cherries
  • 2 c. flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 3 Tbsp. sugar
  • 1 egg, beaten
  • 1 c. milk
  • 3 Tbsp. oil
  • 1/4 c. sugar
  • 1/8 tsp. cinnamon

    Pit cherries and drain.

    Sift flour, baking powder, salt and sugar (3 tablespoons).

    In a bowl, combine the egg, milk and oil. Pour into dry ingredients all at once.

    Stir until dry ingredients are moist, but still lumpy, about 17 to 25 strokes.

    To the drained cherries, add 1/4 cup sugar and the cinnamon.

    Gently fold into batter.

    Spoon batter into lightly buttered muffin pans 2/3 full.

    Bake at 400° for 20 to 25 minutes.
