Sour Cream Apple Pie

  • 2 eggs
  • 1 c. sour cream
  • 1 c. sugar
  • 6 Tbsp. all-purpose flour, divided
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt
  • 3 c. chopped, peeled cooking apples
  • 1 (9-inch) unbaked pie shell
  • 3 Tbsp. margarine, melted
  • 1/4 c. packed brown sugar

Directions

    In a large bowl, beat eggs and add sour cream.

    Stir in sugar, 2 tablespoons flour, vanilla and salt; mix well.

    Stir in apples. Pour in pie shell and bake at 375° for 15 minutes.

    Meanwhile, combine margarine, brown sugar and remaining flour.

    Sprinkle over top of pie.

    Return to oven for 20 to 25 minutes or until filling is set; cool.

    Serve warm or cover and refrigerate.
