Southern Buttermilk Pie

  • 1 1/4 c. sugar
  • 1/4 c. (1/2 stick) softened butter or margarine
  • 2 Tbsp. flour
  • 3 eggs
  • 2 c. buttermilk
  • 1 Tbsp. lemon juice
  • 1/8 tsp. salt
  • 1 (9-inch) unbaked pie shell

Directions

    Place rack in lower third of oven; preheat to 400°.

    Combine sugar, margarine and flour in medium bowl; beat until smooth and creamy.

    Add eggs, one at a time, beating well after each addition.

    Stir in buttermilk, lemon juice and salt.

    Pour into unbaked pie shell.

    Bake for 10 minutes.

    Reduce heat and bake at 350° for approximately 40 minutes, or until filling sets and is lightly browned.
