- 1 1/4 c. sugar
- 1/4 c. (1/2 stick) softened butter or margarine
- 2 Tbsp. flour
- 3 eggs
- 2 c. buttermilk
- 1 Tbsp. lemon juice
- 1/8 tsp. salt
- 1 (9-inch) unbaked pie shell
Directions

1Place rack in lower third of oven; preheat to 400°.

2Combine sugar, margarine and flour in medium bowl; beat until smooth and creamy.

3Add eggs, one at a time, beating well after each addition.

4Stir in buttermilk, lemon juice and salt.

5Pour into unbaked pie shell.

6Bake for 10 minutes.

7Reduce heat and bake at 350° for approximately 40 minutes, or until filling sets and is lightly browned.
