Southern Chicken Pie

  • 1 c. cooked chicken, diced
  • 1 (16 oz.) can Veg-All, drained
  • top and bottom pie crusts
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1/2 tsp. lemon juice
  • 1/2 c. milk
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 1/2 c. chicken broth or 1 1/2 c. water with 2 chicken bouillon cubes

Directions

    Line pie pan with crust.

    Melt butter; add flour and stir until light brown, about 2 minutes).

    Stir in broth.

    Stir until thick. Slowly add milk stirring.

    Add salt, pepper and lemon juice.

    Cook until quite thick, about 5 minutes.

    Add chicken and Veg-All and pour in crust.

    Seal.

    Bake at 425° for 25 minutes.

    Cool 5 minutes.
