- 1 cup whole kernel canned corn, drained
- 1 egg
- 1 Tbsp. sugar
- 2 Tbsp. oil
- 1/2 medium sized onion, chopped
- 1 1/2 cups corn meal
- 1/2 cup flour
- milk
- salt and pepper
Directions

1In a medium sized bowl mix cornmeal, flour, egg, sugar, salt, pepper, corn and onion. Add enough milk to make a pancake-like batter. Pour mixture into a greased baking pan and bake at 350° for 35 to 40 minutes or until top starts to brown slightly. Remove from oven and slice into squares. Serve hot with butter.
