  • 1 cup whole kernel canned corn, drained
  • 1 egg
  • 1 Tbsp. sugar
  • 2 Tbsp. oil
  • 1/2 medium sized onion, chopped
  • 1 1/2 cups corn meal
  • 1/2 cup flour
  • milk
  • salt and pepper

Directions

    In a medium sized bowl mix cornmeal, flour, egg, sugar, salt, pepper, corn and onion. Add enough milk to make a pancake-like batter. Pour mixture into a greased baking pan and bake at 350° for 35 to 40 minutes or until top starts to brown slightly. Remove from oven and slice into squares. Serve hot with butter.
