Southern-Fried Chicken Strips

  • 1/4 c. milk
  • 1/2 c. low-fat plain yogurt
  • 3/4 c. all-purpose flour
  • 3/4 tsp. leaf thyme, crumbled
  • 1/2 tsp. salt
  • 1 lb. boneless, skinned chicken breast, cut into strips about 3 x 1/2 x 1/2-inches
  • 1/2 tsp. black pepper
  • 1/4 tsp. ground hot red pepper
  • vegetable oil for frying

    Combine milk and yogurt.

    Add chicken strips, toss to mix. Combine dry ingredients on piece of wax paper.

    Put 1/4 inch oil into skillet and heat to 325°.

    Add evenly coated chicken, avoiding overcrowding skillet.

    Cook until browned on bottom. Turn to brown other side.

    Remove from oil to drain.

    Serve immediately.
